Description
A 100% hand-picked Uji matcha — a ceremonial grade blend of two prized cultivars, Gokō and Samidori — from an Edo-period family farm in Sumiyama, a quiet mountain tea-growing area in northern Uji, Kyoto. Every leaf is picked by hand during the first spring flush, processed into tencha, and stone-milled slowly in Kyoto. Gokō contributes plush, creamy sweetness and deep umami; Samidori adds a vivid green color and clean, refined clarity. The result is a ceremonial grade matcha powder that is smooth and composed — vibrant green, with generous umami, gentle natural sweetness, and almost no bitterness. Part of our Signature Uji Series, it is the most labor-intensive matcha we offer. Origin Sumiyama, northern Uji, Kyoto Prefecture, Japan — a quiet mountain tea-growing area. Cultivars Gokō and Samidori, two prized Uji cultivars blended at the tencha stage. Harvest First spring harvest (ichibancha), 100% hand-picked leaf by leaf. Farm A multigenerational, Edo-period family farm — six generations of traditional Uji tea-making. Grade Ceremonial grade — suited to thin usucha, thick koicha, and premium matcha lattes. Production Shade-grown, processed into tencha, and stone-milled slowly in Kyoto. Taste profile Vibrant green with rich umami, gentle sweetness, layered green-tea notes, and a clean, composed finish with minimal bitterness. Preparation Whisk 1–2 g with hot (not boiling) water for usucha; use more powder and less water for koicha; or blend with milk or oat milk for a latte. Packaging Packed fresh in a resealable, airtight 30 g tin to protect color, aroma, and freshness. Rarity Hand-picked tencha is only a small fraction of Japanese production and is rarely exported. This is a limited annual release; once a seasonal batch sells through, it returns with the next spring.
