Abstract

This dataset contains experimental data supporting a study on the effects of hot-air drying temperature and duration on the antioxidant activity and UPLC-HRMS metabolite profile of Rhizophora mucronata herbal matcha-like powder. 1. The drying experiment used a completely randomized 3 × 3 factorial design: - Drying temperatures: 60, 65, and 70 °C - Drying durations: 120, 135, and 150 min - Independent replicates: n = 3 per treatment combination - Technical replicate measurements were averaged within each independently processed sample before statistical analysis. 2. TREATMENT CODES A1B1 = 60 °C, 120 min A1B2 = 60 °C, 135 min A1B3 = 60 °C, 150 min A2B1 = 65 °C, 120 min A2B2 = 65 °C, 135 min A2B3 = 65 °C, 150 min A3B1 = 70 °C, 120 min A3B2 = 70 °C, 135 min A3B3 = 70 °C, 150 min 3. STATISTICAL ANALYSIS The drying experiment followed a completely randomized 3 × 3 factorial design. The effects of drying temperature, drying duration, and their interaction were evaluated using two-way ANOVA. Tukey’s honestly significant difference (HSD) test was used for post-hoc comparison at p < 0.05. 5. UPLC-HRMS INFORMATION UPLC system: Waters ACQUITY UPLC Column: HSS C18, 2.1 × 100 mm, 1.8 µm Flow rate: 0.20 mL min^-1 Injection volume: 5 µL Mass spectrometer: Xevo G2-XS QTOF Ionization: ESI positive mode Acquisition: MSE Mass range: m/z 50-1200 Representative putative annotations: Rhizophora Matcha-like UPLC-HRMSBPI.pdf Peak 1: Ferulic acid (RT 1.85) Peak 2: Caffeoylquinic acid isomer (RT4.64) Peak 3: 5,7,4′-Trihydroxyflavanone (RT 6.40) All three annotations should be treated as putative MSI Level 2 annotations.…
