Abstract

The consumption of healthier foods has been growing worldwide. This increase is justified by the innumerable benefits they bring to human health because they are rich in vitamins, minerals and chemical constituents. In view of this fact, the present work had as objective to elaborate and to realize physical-chemical analyzes, antioxidants, phenolic compounds and flavonoids of Japanese type green tea and Frozen Yogurt developed with yogurt base. Frozen Yogurt was developed and analyzed in the Laboratories of the Federal Technological University of Paraná. Yoghurt and Frozen Yogurt were first elaborated, and the antioxidant, phenolic, flavonoid and physicochemical analyzes were carried out. The results were submitted to the Tukey test. The results obtained for the antioxidant analyzes showed significantly different values, the result obtained for Sencha being the highest for teas, and Frozen Yogurt with Sencha extract for Frozen Yogurt, for physico-chemical analysis of Frozen Yogurt results Were similar, whereas the results obtained for the teas occurred great differences for Matcha in relation to the comparative literature. The product developed can be considered an innovative product, since up to the present moment they have not been observed in the Brazilian market, Frozen Yogurt plus Matcha and Sencha extract, which enrich the product by the presence of compounds with antioxidant activity, such as, Phenolic compounds and flavonoids.
