Abstract

Monitoring carotenoids during matcha drying processing is critical for determining the color and aroma quality of matcha. The objective of this study is to monitor the carotenoid content during different phases of matcha drying utilizing a portable near-infrared (NIR) spectroscopy. A total of 275 tea samples were obtained at various stages of drying for spectral acquisition and carotenoid analysis. After normalization preprocessing, bootstrapping soft shrinkage (BOSS), iteratively variable subset optimization (IVSO), and variable iterative space shrinkage approach (VISSA) were employed to select the characteristic variables and establish the partial least square (PLS) calibration models. The BOSS-PLS model achieved optimum performance, with a correlation coefficient (Rₚ) of 0.9592 and residual predictive deviation (RPD) of 3.47 in the prediction set. The results suggest that the portable NIR spectroscopy system is a promising tool that could be used as an alternative method for immediate quantification and monitoring of carotenoids during matcha drying processing.
