It starts with a hint of umami, goes straight to a hint of bitterness & astringency but fast disappearing, leaving with a mellow sweetness to linger. Such a beautiful tea! Great for Usucha (2g to 80ml - 100ml of water). 30g/$58 Chiyoka 千代香: An artful blend of Samidori & Goko cultivar. More espresso-like and subtle earthiness, but not unpleasant. Great for Usucha & a mellow matcha latte. 30g/$48 Matcha line-up from AOI seicha: . Kiju no Mukashi (葵寿の昔): top KOICHA grade matcha full of aroma & umami; the first sip was on the grassy side but the more sips taken in the beautiful notes of sunflower seeds coming out. We prepared this as KOICHA (5g to 50ml) at our Nishio tasting workshop and it was actually well-received. 30g/$98 Tsukumo no Shiro (白の城): an entry level Usucha grade of AOI seicha. A bright & flavorful blends suitable for both Usucha & matcha lattes. The earthiness & astringency finish balances well with milk, yet still enjoyable on its own. 30g/$58 Haruka (春香): Limited organic Spring blend - fresh & floral with a gentle touch of wet earth & freshly mown grass. Great for both Usucha & Lattes 30g/$48 Soushun no Kaori (早春の香り): Limited organic Spring blend - slightly less umami than Haruka, yet carries the same fresh & floral notes. Great for both Usucha & Lattes 30g/$48 Nishio Patisserie ( パティスリー )100g: high grade "culinary" matcha from Nishio with a vibrant green color that's better than most Ceremonial matcha out there. It does have a grassier & floral taste with a gentle dark chocolate & nutty finish, yet blends with milk so harmoniously!
